Sake
 
        JY254 - Ginjo
Isolated from a very popular non-foaming yeast with fruity and bubble gum notes. Known for strong and slow fermentations and used for ginjo type sake with fruity and floral aroma.
 
        JY255 - Ginjo-ka
This sake yeast shows strong fermentation at lower temperatures. It produces lower levels of acidity  with pleasant citrus notes.
 
        JY256 - Apple
This strain will produce a pleasant distinct green apple character.  Will perform better at warmer temperatures.
 
        JY257 - Daiginjo
This yeast is suited for lower temperature fermentations, resulting in a fruity aroma. Good for ginjo and daiginjo.
